Rinse the barley with cold water in a strainer and rinse it underneath your faucet. use always cold water so barley doesn’t cook to early and lose any of its flavor. clean the barley in running water until it comes out clear.

Put the barley along with lemon zest and water in a pot and pour the rinsed barley into a clean pot along with 6 cups of cold water.

Bring the mixture to the boil 1 to 2 minutes on the stove let the water boils until it bubble for at-least 2 minute

Simmer the barley for another 30-60 minutes, keep the burner to medium-low heat and let the barley simmer for at-least 30-minutes. Stir the mixture with a spoon so the barley doesn’t get stuck to the pot.

Strain the mixture into a heat-safer bowl so you can easily pour the water out into it. put the honey and stir until it dissolves, if you looking to reduce sugar can replace honey with pinch of stevia.

Pour into bottles and keep it in a refrigerate to get chilled.
